You're being deceived by Christianity. The so-called "canon" of the Bible was mostly a later effort to prune out texts that didn't read as "real."
A huge subplot was just removed. The "psycho God," as you put it, was dealing with the severe problem of another race of humanoid giants having been illicitly created that were wiping out the humans.
What you end up reading is half the story. The “weird” themes of the Bible, including the giants, came back into view with the Dead Sea Scrolls. I’ve written a few posts about it and there’s lots of details in books like Michael Heiser’s The Unseen Realm.
