The term "son of man" is used over 100 times in the Old Testament alone and just means the child of humans, i.e. a person.
As always the Bible is very complex and many facts and arguments can be cited on almost any point. Another scholar translating the line in the Gospel of Mary uses the phrase "the Child of Humanity."
